2 cups cooked black-eyed peas
3 cups cooked long grain rice
1/2 cup chopped red onion
1/2 cup chopped celery
1 jalapeno pepper seeded and minced
1/4 cup fresh parsley leaves
1/4 cup fresh mint leaves
1 clove minced fresh garlic
1 teaspoon kosher salt
3 tablespoons fresh lemon juice
1/4 cup virgin olive oil
1/2 teaspoon fresh ground black pepper
Combine peas and rice and next three ingredients in a large bowl.
Place herbs and garlic on a cutting board and sprinkle salt over them. Finely mince the garlic and herbs. Sprinkle over rice mixture and stir gently.
Combine lemon juice, oil and pepper and gently stir into rice mixture.
Chill for two hours. Serve cold
